Barberry masghati


۵۰۰ ml of barberry juice

۲۰۰ grams of wheat starch

۳ tablespoons gelatin powder

۲۰۰ grams of sugar

۱ tablespoon cardamom powder

۱۰۰ ml of cold water

۷۰ grams of barberry

۲ tablespoons glucose

How to prepare:

To prepare barberry masghati, you must first pour the gelatin into cold water and then place it on steam to melt. Then wash the wheat starch with cold water and keep it in some water for the starch to settle. After the starch has settled, drain the water separated from it. Repeat this process several times to make the starch clear after cooking and eliminate its unpleasant odor. Then mix barberry juice with sugar, starch and glucose and pour the mixture into a saucepan. Then place the pot on low heat. Stir the contents of the pot very gently. Add the gelatin and cardamom powder to the boiling material as it approaches the boiling point. Then stir until the mixture thickens in the pot.

Now add the barberry to the contents of the pot and before the mixture cools, pour it into the desired mold. Note that the mold must be pre-greased with butter. Keep the mold in the refrigerator for 3 hours. After this time, your barberry masghati is ready. Now, after cutting and placing the masghaties in the desired dish, you can decorate them using pistachios.
